BREAKFAST BITES
Ingredients
2 cups (240g) Pearl Milling Pancake Mix
2 Eggs
1½ cups (360ml) Milk
2 tbsp (30ml) Oil
340g (12 oz) Breakfast Sausage
1 cup (100g) Gruyère Cheese, shredded
¼ cup (60ml) Maple Syrup
Method
Cook the Sausage – In a skillet over medium heat, break down and cook the breakfast sausage until browned. Set aside to cool slightly.
Mix the Batter – In a large bowl, combine pancake mix, eggs, milk, oil, maple syrup, cooked sausage, and Gruyère cheese. Stir until evenly combined.
Fill the Muffin Tin – Lightly grease a muffin tin. Fill each cup with the mixture, leaving a little room at the top.
Bake – Bake at 350°F (175°C) for 20–25 minutes, or until golden and set.
Additional Notes
This recipe is all about experimenting. It’s basic, and I made it using what I had in my cabinet. You can switch up the pancake mix, use a different kind of sausage, try multiple cheeses, or just swap Gruyère for something else entirely. You can even toss in an egg or experiment with different flavors of maple syrup.
This is one of those recipes where you can really lose yourself trying different combinations. It comes together easy, and almost every ingredient can be swapped for something else to help you create your perfect bite.
