CHIPOTLE BLACK BEANS
Ingredients
1 lb (454g) dried black beans
2 yellow onions, diced
7 cloves (21g) garlic, minced
3 chipotle chiles in adobo sauce
1 tsp (1g) dried oregano
1 tsp (2g) ground cumin
4 bay leaves
3 tsp (18g) salt
1 tsp (2g) black pepper
1 tbsp (15ml) lime juice
Method
Soak the Beans – Soak the black beans in water overnight. Drain and rinse before cooking.
Sauté the Aromatics – Heat a pot or Dutch oven over medium heat. Add the diced onions and cook until softened. Add the garlic and cook until fragrant.
Build the Pot – Add the soaked beans, chipotle chiles, oregano, cumin, bay leaves, salt, and black pepper. Add enough water to fully cover the beans.
Cook – Bring to a boil, then reduce to a simmer. Cook uncovered for 1½–2 hours, or until the beans are tender.
Finish and Serve – Remove the chipotle chiles and bay leaves, stir in the lime juice, and serve.
Additional Notes
Feel free to use canned beans if you’d like to cut down the cooking time.
This would probably go really well with rice.
