CILANTRO LIME RICE
Ingredients
6 cups (1.2kg) rice
4½ cups (1.06L) water
6 tbsp (85g) butter
6 tsp (36g) salt
1 cup (16g) cilantro
1 lime, juiced
Method
Bring to a Boil – Add the water, butter, and salt to a pot and bring to a boil.
Add the Rice – Stir in the rice and bring it back to a boil.
Simmer – Once boiling, cover and reduce to a simmer. Cook for about 25 minutes, or until the rice has absorbed all the water.
Fluff – When the rice is done, remove from the heat and fluff with a fork.
Finish – Add the cilantro and lime juice, then stir until everything is evenly combined.
Additional Notes
Feel free to taste and add more lime, cilantro, or salt as needed.
As stated, I followed the directions on the package for the rice.
I thought I used Thai long grain jasmine rice, but I actually didn’t. I used Carolina Gold Enriched Parboiled Extra Long Grain Rice, not Jasmine Thai Fragrant Long Grain Rice.
Ultimately, use whatever rice you want and cook it however you know how. The method above reflects how I cooked the rice I used — different rices will obviously vary.
