GARLIC CONFIT

Ingredients

For the Garlic Confit

  • 20 cloves (60g) garlic

  • a few sprigs thyme

  • a few sprigs rosemary

  • 3 bay leaves

  • olive oil, enough to fully submerge the garlic

Method

  1. Preheat the Oven – Set your oven to 325°F (160°C).

  2. Assemble the Ingredients – In an oven-safe dish, add the garlic cloves, thyme, rosemary, and bay leaves. Pour in enough olive oil to fully cover everything.

  3. Bake Uncovered – Bake uncovered for about 30 minutes, or until the garlic is soft, golden, and easily spreadable.

  4. Check for Doneness – Keep an eye on it to make sure it doesn’t burn — all ovens run differently. The garlic should be tender and buttery, not browned or crisp.

  5. Cool & Store – Let it cool, then transfer to a jar, making sure the garlic stays fully submerged in oil. Store in the refrigerator for up to two weeks.

Additional Notes

Feel free to add whole peppercorns, red pepper flakes, or really anything you want to give the garlic whatever flavor profile you’re going for. Garlic confit is extremely flexible — make it your own.

You can also cook this at a lower temperature for a longer time if you prefer a deeper, sweeter flavor. The method shown here is simply a faster version, but both approaches work beautifully.
