SOY GARLIC CHICKEN

Ingredients

For the Chicken

  • 1.09 lbs / 497 g boneless skinless chicken thighs, cut into 1-inch cubes

  • 3 tbsp / 45 ml soy sauce

  • 2 tbsp / 30 ml dark soy sauce

  • 3 cloves garlic, minced

  • 1 tsp / 3 g garlic powder

  • 1 tbsp / 12 g brown sugar

  • 2 tbsp / 30 g lemongrass paste

  • 1 tbsp / 8 g cornstarch

For Cooking

  • 1 tbsp / 15 ml vegetable oil

  • ½ medium onion, sliced

  • 2 stalks green onions, whites and greens separated

For Garnish

  • Sesame seeds

  • Green onions, chopped

Method

1. Marinate: Cut the chicken into 1-inch cubes. Combine with the soy sauce, dark soy sauce, minced garlic, garlic powder, brown sugar, lemongrass paste, and cornstarch. Mix well and marinate for at least 5 minutes.

2. Sauté the Onion: Heat the vegetable oil in a pan over medium-high heat. Add the onion and cook until softened and translucent.

3. Cook the Chicken: Add the marinated chicken to the pan followed by the green onion whites. Stir fry for 4–5 minutes until the chicken is cooked through and caramelized.

4. Finish: Add the green onion greens and sauté on high heat for 2 minutes.

5. Serve: Serve over white rice and garnish with sesame seeds and extra green onions.

Overall: Super simple, super easy, super fast, and super delicious. It's the perfect 20-minute meal.
